Sea
urchin:
A sea urchin is covered with spines like a chestnut. It lives between
stones on the sea bottom or the cracks of rocks. Its reproductive
organs are especially tasty. It was regarded as one of the top three
delicacies of Japan in ancient times. Outside of Japan, sea urchins
are eaten only in areas around the Mediterranean Sea areas. Now,
Japan imports them from Canada, Alaska, and Korea. For the Japanese,
freshly boiled rice served with raw sea urchin, green horseradish,
and nori is a superb delicacy.
